Local/Regional/Organic/Harvesting
We make every effort to purchase first from local and regional suppliers and vendors. As an example, we currently purchase from 13 different Florida vendors to obtain the variety of fresh fruits and vegetables needed to satisfy all of our menus. We have also introduced organic options on a number of our menus. Ingredients for these organic selections are also obtained from local and regional suppliers. In 2007 we were successful in eliminating all trans-fats from any item we produce and every ingredient we purchase.
Our suppliers and their partners do business only with companies that adhere to fair trade certification standards, are non-discriminatory, follow fair wage guidelines and legal and moral child labor practices. All fish is line-caught and adheres to current net ban initiatives. All animal products are sourced from farms of the highest quality standards, practicing safe and humane treatment. |
